La truffade
The truffade is THE typical dish from Auvergne, made with potatoes, fresh tomme, salt and pepper and served with raw ham from Auvergne and green salad. Originally, it was prepared by the shepherds who left for long periods in the mountain burons and takes its name from the word “trufada” which means potato in Auvergne dialect. Be careful, the potatoes must be well grilled in a pan!
La potée auvergnate
Another essential dish from Auvergne, the Potée Auvergnate (Auvergne hotpot) is another dish "which will keep you warm" with many vegetables (cabbage, turnip, carrot and potato) and meat (lean bacon, pork leg and sausage). Everything simmers for long hours in a large pot and the cabbages are braised with the charcuterie.
Le petit salé aux lentilles
Another flavorful dish to be enjoyed to warm up in the middle of winter, the petit salé aux lentilles (salted lentil dish). It is a melting dish thanks to the consistency of the lentils and the pork cooked in brine, which had little success as early as the 14th century. If it grows in Puy-en-Velay, the lentil benefits from a controlled designation of origin.
